No Mam! Butter Chicken
This recipe is so easy and delicious that, even after I’ve removed practically everything that made it decadent, it still tastes like something you should eat behind closed doors and lie about afterward. No butter. No cream. Just an indecently good dinner and the vague feeling you are going to make this on repeat.
Preparation Steps
Ingredients
1.Base: In Instant Pot, combine tomatoes, garlic, ginger, cayenne, turmeric, cumin, paprika, salt and 1 tsp garam masala. Stir to combine.
2. Chicken: Place two chicken breasts on top of the base.
3. Pressure Cook: Lock the lid and pressure cook on high for 10 minutes. When cooking time is finished, allow pressure to release naturally.
2 boneless, skinless chicken breasts
1 (14oz) can diced tomatoes
5 minced cloves of garlic
1 TBS minced ginger
1 tsp turmeric
1 tsp cumin
1 tsp paprika
1 tsp salt
a dash of cayenne
2 tsp garam masala (divided)
1/4 - 1/2 cup cilantro (course chop)
1/2 cup unsweetened coconut milk
4. Shred: When lid unlocks, remove the chicken and shred it.
6. Put it all together: Add the shredded chicken back into the pot and stir to combine. You can leave it in the Instant Pot on Keep Warm until you're ready to serve.
5. Sauce: Add the cilantro, coconut milk and 1 tsp garam masala to the sauce still in the Instant Pot. Use an immersion blender to blend it together until smooth and creamy. It's okay to still have chunks. *You can also toss this in a blender if you don't have an immersion blender.
Serve over white rice, with a bit of extra cilantro and some warm vegan naan. Naan recipe to follow.
